Fifty-five years ago today, Dennis and I were married and sealed for time and eternity in the Los Angeles temple. Looking back I can see that I really hit the jackpot that day! He's been a wonderful husband and father. He's been a good example for us all. His testimony of and faith in Christ has carried us over some rough spots. He's supported me in all the crazy projects I come up with. He's made me so happy all these years. He's not perfect but he's been the perfect mate for me! It's been an incredible journey and I'm so grateful that we made it together this far. I have been richly blessed! We are moving slower now, our bones ache sometimes, we can't get as much done in a day as we used to, people seem to talk softer or sometimes mumble (maybe we don't hear as well as we used to!) and we go up and down stairs very carefully. On the outside the years are very visible. But on the inside--oh, on the inside we aren't that much different than we were all those years ago. Still so much in love, still excited about the future, still committed to enduring to the end. Then we didn't know that we would be blessed with such an amazing, beautiful family. Now we feel such love for each of you and understand a little bit the great love that Heavenly Father has for his children. We pray for you to be as blessed as we have been.

Here we are in 1958
I've been doing a little experimenting with recipes and YOU'RE GOING TO LOVE THIS!
Coconut Pancake Syrup
2 Cups brown sugar
1 Cube butter
1 Can Coconut Milk (13.5 ounces)
1 tsp Baking Soda
2 tsp Vanilla
In large saucepan mix sugar, butter and coconut milk. Bring to a boil. Remove from heat and add Baking Soda and Vanilla. It will froth up. As it cools the foam goes down and mostly disappears. Serve over pancakes, waffles or ice cream. So yummy!

We tried these the other night and they are keepers. I used a bigger flour tortilla and made them more like Burritos. I did use a little chicken in mine, but they would be just as good without. I use coconut oil for almost everything fried, sauteed or baked. If you haven't tried it, you should. It's GOOD! (and so good for you!)
Tortillas rolled with a shredded chicken, cream cheese, cheddar, salsa and spinach filling with dipping sauces on the side for dunking. They have an addicting crunch that gives way to creamy, cheesy insides that will turn these into fast favorites.
Ingredients
3 cups cooked shredded chicken ( like rotisserie)
6 ounces cream cheese, softened
1/3 cup sour cream
1/2 cup salsa
1 + 1/2 cups shredded sharp cheddar cheese
1 + 1/2 cups chopped baby spinach, stems removed
coarse salt and fresh black pepper, to taste
9 - 10 (6-inch) flour tortillas
vegetable or canola oil, for frying
your choice for serving:
sour cream/quacamole/salsa/taco sauce/ranch dressing
Instructions
- In a large bowl mix together the chicken, cream cheese, sour cream, salsa, cheddar and spinach. Season to taste with salt and pepper.
- Working with one tortilla at a time add 2 heaping tablespoons of the chicken mixture off center and spread out like a log. Roll up and set seam side down on a platter. Repeat until all the tortillas are filled and rolled.
- Add enough oil to a large skillet to generously cover the bottom. Heat on medium to medium-low heat, cook tortillas in batches, turning to brown each side. Remove to paper towels to drain.
- Serve with your choice of dunking sauce
FOOD STORAGE
For you young families, living in apartments or small houses with not much room for storing 5 gallon buckets and large amounts of food, here's an idea that I saw and tried. You can fit a lot of full 2 liter bottles under your bed or in a small closet.
Easy long term food storage for a variety of stapes: rice, beans, grains (like polenta & cream of wheat) and sugar. Buy in bulk, store in clean empty bottles and use what you need as you need it! They are water and air tight and keep bugs out! So much better than 5, 10 or 55 gallon containers or even sacks. 1 and 2 liter sizes are great for trading too! Click LINK for full article.

We hope you are all working toward building up your food supply. We feel sure it will be needed in the coming days.
We are looking forward to the Reber Reunion the end of June. Hope to see many of you there. We are going to Arizona so see Ray and Neil before we head to Utah and the reunion. Looking forward to Caleb's farewell June 23 and Devery's farewell July 7. Will spend time with all our family members in Southern Utah. It's going to be a busy two months and we are excited!
